Rosh Bora ( lentil dumplings in sugar syrup)

” PITHE or PULI ” is a traditional dish that is made on the auspicious occasion of Makar Sankranti or Poush Parbon. I love this festival. My Mother makes so many varieties of sweets like ‘Dudh Puli’, ‘Bhaja Pithe’, ‘Patisapta’, etc and each of them tastes delicious.

Rosh bora is another sweet of this festival. These are soft Urad Dal dumplings or fritters soaked in light jaggery or sugar syrup.
Yields:
30 – 35 dumplings

10 minutes + 5-6 hours for soaking

15-20 minutes

Ingredients
  • Urad dal (split) / Black husked lentils – 1 cup
  • Fennel seeds – 1 tsp
  • Fennel Powder – 1/2 tsp ( optional )
  • Baking soda – 1/4 tsp
  • Salt a pinch
  • Sugar – 1 1/2 – 2 cups
  • Jaggery – 1/2 cup
  • Water – 2 – 3 cups
  • Lemon Juice – 1 tsp
  • Oil for deep frying
Instructions
Rinse and then soak 1 cup of Urad Dal in enough water for at least 5-6 hours.
Drain and grind it to a smooth paste by adding little or no water.
Pour the batter in a bowl , add a pinch of salt, fennel seeds and 1/4 tsp baking soda , and beat it for 5-7 minutes or until fluffy.
Now make sugar syrup. Take sugar , jaggery , water and lemon juice (lemon juice prevent sugar solution from crystallizing) in a pan and boil until sugar is dissolved in water then simmer it for around 10-15 minutes.
In a deep frying pan, heat enough oil to fry the lentil fritters.
Fry the vada or bora till they are a nice crisp golden on both sides.
Soak the fried bora or dumplings in the sweet syrup.
Rosh Bora is ready to serve.
