” PITHE or PULI ” is a traditional dish that is made on the auspicious occasion of Makar Sankranti or Poush Parbon. PATISHAPTA , is one of the finest & most delicious of them all.
Patishaptas are thin crepes or pancakes , made with all purpose flour, rice flour, and semolina , stuffed with kheer or coconut-jaggery filling. Here I have made a fusion with a little bit of twist , instead of using the traditional coconut-jaggery stuffing/filling , I’ve used Chocolate Whipped Cream. These are light , delicate and also make a special breakfast or brunch.

Ingredients
For the Crepe batter
- Maida or All-Purpose Flour – 1/2 cup
- Sooji or Semolina – 1/4 cup
- Rice Flour – 1/4 cup
- Milk – 3/4 cup + a little more
- Sugar – 1 1/2 tsp
- Salt – 1/8 tsp
- Ghee or oil – for frying
For the Pur or Filling
- Heavy Whipping Cream – 1 cup
- Chocolate bar/Baking Chocolate – 4 oz
- Powdered sugar – 2-3 tbsp (optional) (If using unsweetened chocolate add more if needed)
For the Garnish
- Chocolate Sauce
Instructions
Melt 4 oz of chocolate with 1/4 cup of cream , taste , add sugar if needed. Add the rest of the cream , mix , and keep it in the fridge for at least 30 minutes. Whip the chocolate-heavy cream mix until soft peak forms.
Take all the ingredients under the crepe batter in a mixing bowl and mix to form a smooth batter. Make sure there are no lumps in the batter. Once the batter is ready, keep it aside for few minutes.
Now take a non-stick pan , add oil or ghee , put it in medium flame. Pour a ladle full of batter and spread it evenly by tilting the pan or using the ladle. Fry till they are light golden brown in color.
Remove the crepe from the pan and keep aside to cool down for few minutes.
Place the whipped chocolate ctream lengthwise at the center and roll it from one side.
Drizzle chocolate sauce on top & serve chilled or at room temperature. ENJOY !!
