What is Zafrani Pulao ?
Zafrani Pulao or Sweet Saffron Pulao is a delicacy made basically using fragrant basmati rice cooked in saffron, ghee and sugar, garnished with nuts like almonds, cashews, pistachios, and raisins. This simple quick and easy zafrani pulao recipe pair very well with any Indian curries. Enjoy it as your weekend meal or cook up this easy Zafrani pulao and surprise your guests.

Ingredients
  • Long Grain Basmati Rice – 1 cup
  • Sugar – 2-3 tbsp
  • Ghee – 2 tbsp
  • Almonds – 8-10
  • Cashew Nuts – 8-10
  • Pistachio – 8-10
  • Raisins – 10-12
  • Green Cardamom – 5-6
  • Cinnamon Stick – 2 (1 inch)
  • Cloves – 5-6
  • Zafrani Garam Masala Powder – 1 tsp
  • Hot Milk – 1 tbsp
  • Saffron – 2 pinch
  • Salt to taste
Instructions
Wash and soak rice for about 30 minutes and soak saffron in 1 tbsp of hot milk for at-least 10-15 mins.
Heat 4-5 cups water in a pan and when it comes to a boil, add the soaked rice along with half of the whole spices (cardamom, cinnamon, clove) in the pan. Cook for about 7-8 minutes or until the rice is about 90% cooked. Drain and keep it aside.
Heat ghee in another pan. Once the ghee is hot, add nuts, raisins, and the rest of the whole spices, fry until they turn slightly browned.
Now add the cooked rice, garam masala powder, salt, and sugar. Mix well.
Now add the soaked saffron on one side of the rice to get both white and yellow color effect. Cover and cook for another 1-2 minutes on low heat. Turn off the gas and let it sit for another 8-10 minutes with the cover on.
Zafrani Pulao is now ready to serve with your favorite curry.
