What Is Chow-mein ?
Chow-mein is Chinese stir-fried noodles with vegetables and sometimes with meat. In India, it was introduced by the Chinese of Calcutta. It is usually offered Hakka or with gravy. There is an Indian variant, vegetable chow mein, which consists of noodles with cabbage, bell peppers, and carrots. Another non-meat Indian variant includes scrambled eggs as a protein source. Ingredients
- Noodles – 300 gm ( approx)
- Onions , medium – 1/2, chopped
- Mixed vegetables , as per your choice , thinly sliced – 1 cup (I’m using carrot , cabbage , red bell pepper and spring onion)
- Garlic ,chopped – 1 tbsp
- Ginger , chopped – 1 tsp
- Tomato Ketchup – 2 1/2 tbsp
- Green Chilli Sauce – 1 tbsp
- Soya Sauce – 1 tbsp
- White Vinegar – 1 tbsp
- Green Chili , chopped – 1 tbsp
- Black pepper Powder – 1 tsp
- Salt, to taste
- Sugar – 1/2 tsp
- Oil – 2-3 tbsp
Instructions
Cook the noodle as per the instruction. Rinse under cold water, drain and set aside.
Whisk all the sauce and vinegar together in a small bowl, making sure to dissolve the sugar. Set aside.
Place a large non-stick skillet or wok over medium heat , add some oil , fry onion for 1-2 minute.
Then add ginger and garlic , fry until fragrant.
Add vegetables one by one (carrot , cabbage then bell pepper) , fry until wilted. Season with salt.
Add the noodles and sauce mixture. Sprinkle spring onion and black pepper on top. Toss everything together until well combined and heated through.
Serve hot.
