Patishapta (Coconut Filled Crepe)

” PITHE or PULI ” is a traditional dish that is made on the auspicious occasion of Makar Sankranti or Poush Parbon.

PATISAPTA , is one of the finest & most delicious of them all. These are thin crepes or pancakes , made with all purpose flour, rice flour and semolina , stuffed with kheer or coconut-jaggery filling.

Bhapa Ilish ( Steamed Hilsa in Mustard gravy )

Bhapa Ilish means ‘Steamed Hilsa’ , where BHAPA represents ‘STEAMING’.

It is a classic Bengali preparation where fresh Ilish/hilsa is marinated in mustard seed paste , along with turmeric, green chili, salt and a liberal dousing of mustard oil , and then steamed in a stainless steel tiffin box or covered pot.

Bhapa ilish can be prepared in pressure cooker, steamer , or even in a microwave oven.

Easy Malpua (Sweet Indian Pancakes)

MALPUA is a sweet pancake served as a dessert in many regions of India. The batter for Malpua is prepared by mixing flour, semolina and milk , seasoned with cardamom powder and fennel seeds. Traditionally , Malpua is deep fried in ghee and then dipped in a sugar syrup. But for a healthier version of this popular dessert recipe, you can shallow fry the Malpuas as well.

Tomato – Shorshe Rui / Carp in Tomato – Mustard Gravy

It is a bengali style fish curry , prepared with mustard and tomatoes. This curry is easy to make with a little twist to regular mustard fish. Fish like rohu, katla, aar, pabda, hilsa etc. can be prepared with this gravy.
