What is Rum & Raisin Ice-Cream ?
Rum & Raisin Ice Cream is a classic summer treat , prepared by using rum soaked raisins. This no-churn ice cream is very easy to make and the best part is no ice-cream machine needed.

Ingredients
  • Heavy Whipping Cream – 2 cups
  • Dark Raisins – 1/3 cup
  • Golden Raisins – 1/3 cup
  • Rum – 3-4 oz
  • Sweetened condensed milk – 12-14 oz
Instructions
Soak raisins in 3 oz of rum in an airtight container or in a bowl tightly covered with plastic wrap, overnight or at least for 4-6 hrs.
In a large mixing bowl , with an electric mixer , beat heavy cream until stiff peaks form.
With a rubber spatula, fold in half of the sweetened condensed milk until combined. Then fold in the other half.
Gently fold in the rum-soaked raisins (reserving some for the topping) including the rum. Mix until incorporated. Taste , add 1 more oz of rum if needed.
Pour the cream mixture evenly into a freezer-safe bowl. Cover and freeze for at least 8 hours.
Scoop out the ice-cream and enjoy.
