What is Rava Kesari ?
Rava kesari is a popular South Indian sweet dish made of rava or suji (semolina) , ghee , sugar , saffron (from which it gets the kesari or yellowish/orangish color) raisin , and nuts.

Ingredients
FOR THE SUGAR SYRUP :
- Sugar – 2/3 cup
- Water – 1 1/4 cup
- Cardamom powder – 1/4 tsp
- Kesar – 2 pinch / Orange Food Color – 1 drop
- Salt , a pinch
FOR ROASTING THE RAVA :
- Ghee – 1/4 cup
- Rava / Sooji / Semolina – 1/2 cup
OTHER :
- Cashew-nuts
- Raisin
Instructions
In a heavy-bottomed pan add the water, sugar, cardamom powder, Kesar ( or , you can use artificial food coloring to get more orangish color ) and salt. Start to heat it on low flame.
In another heavy-bottomed pan, heat ghee, add cashew nuts and raisins and toast them till golden brown. Remove them and keep aside.
In the same pan , roast the rava/semolina on low flame until they turn to very light brown in color. Keep stirring all the time so the rava/semolina doesn’t burn.
When the sugar mixture comes to a full boil, add in the roasted hot rava/semolina , cashew nuts and raisins into the sugar water mixture. Mix well and cover the pan with the lid. Turn off the gas. Do not open the pan for the next 15-20 minutes or until the rava/semolina soaked all the water and comes together like a thick pudding.
Serve warm.
