Ingredients
- Whole wheat flour – 1 1/2 cup
- All-Purpose flour – 1 1/2 cup
- Salt – 1/2 tsp
- Water as needed (3/4 cup – 1 cup)
- Oil for deep frying + 3 tsp
Instructions
Mix flour , salt and oil in a large mixing bowl.
Add little water at a time and knead well to form a dough. The dough needs to be a little stiff and tight, so go slow with the water. The consistency of the dough should be tighter than the regular roti dough. This step is very important in making good puffed up poories.
Cover the dough with a damp cloth or paper towel and let it rest for 15-20 minutes. After resting time knead the dough once again to smooth out.
Divide the dough into 18-20 portions. Roll each ball into a 4 inch disc. Do not roll the poori too thin.
Heat oil in a deep frying pan or kadai. When the oil is sufficiently hot (check by dropping a little amount of dough , if it rises immediately without browning , that means the oil is hot enough) drop rolled out poori..
Press gently and fry till poori puffs up. Turn and fry the other side till golden brown.
Drain on paper towel. Serve immediately with curry , chutney or sweets.
