Ingredients
  • Lamb/ mutton/ goat meat – 1.5 lb
  • Plain yogurt – 1/3 cup
  • Oil – 3-4 tbsp
  • Onions, chopped – 1 1/2 medium
  • Ginger-Garlic paste – 1 tbsp
  • Cinnamon – 2 inch
  • Cloves – 4-5
  • Green cardamom pods – 4-5
  • Bay leaf – 1
  • Dried Red Chili – 2
  • Turmeric powder – 1 tsp
  • Red chilli powder – 1 1/2 tsp
  • Salt to taste
  • Sugar to taste
  • Ghee – 1 tbsp
  • Garam Masala Powder – 1 tbsp
Instructions
Wash the lamb, drain and put into a large mixing bowl. Add the yogurt , salt and turmeric powder , mix to coat the meat well. Let it sit for at least 1 hr.
Heat the oil in a heavy bottomed pan on medium heat. When hot, add the whole spices.
When they begin to splutter, add the chopped onions , turmeric powder , red chili powder and fry untill almost light golden brown and oil starts to separate from the sides.
Add ginger-garlic paste and fry for another 30 seconds.
Add chopped tomato , fry until mushy and oil starts to separate from the sides.
Now add the marinated meat and combine well. Stir frequently to prevent burning. If necessary, splash in a little water from time to time. Fry till oil comes out from the sides.
Reduce the heat. Add a cup of warm water , cover and cook till meat is done.
Sprinkle garam masala and ghee , mix well.
Serve hot with plain rice , pulao , tandoori roti or naan.
