What is Indian ‘Curry’ ?
A typical Indian CURRY , consists of meat , fish , egg or vegetables , stewed in an onion and tomato based gravy, flavored with ginger, garlic, tomato puree, chili peppers and a variety of spices , often including turmeric , cumin , coriander , cinnamon , cardamom and so on.

Ingredients
- Chicken – 2 lb
- Onions , chopped – 2-3 small , depending on the size
- Potato – 2 , medium , cut into half
- Oil – 4-5 tbsp
- Cinnamon stick – 2 inch
- Cardamom pods – 3-4
- Cloves – 3-4
- Turmeric Powder – 2 tsp
- Red chili Powder – 1 1/2 tsp
- Kashmiri Red Chili Powder / Paprika Powder – 1 tsp (optional)
- Ginger-Garlic Paste – 1 tbsp
- Tomato – 1 large
- Coriander Powder – 1 tsp
- Garam masala powder – 2 tsp
- Ghee – 1 tbsp
- Sugar – 1/2 tsp
- Salt, to taste
- Hot Water
Instructions
Marinade chicken with salt and turmeric for 1/2 an hour.
Heat oil in a heavy bottomed pan , add whole spices.
When they begin to splutter add chopped onion , fry until golden brown.
Now add Ginger – Garlic paste , salt , sugar , turmeric powder , red chili powder and coriander powder.
If you’re adding potatoes , add at this point. Fry for 2-3 minutes.
Now add tomatoes. Fry until oil starts to separate from the sides.
Add marinated chicken and fry for 4-5 minutes. Sprinkle water if necessary. Stir frequently.
Add enough water, when comes to boil , cover and cook over medium-low heat until done, about 15-20 minutes.
Add garam masala and ghee , mix well , cook for another minute.
Serve hot with roti , paratha or rice.
