
What is Mughlai Paratha ?
Mughlai Paratha or as we called ‘Moglai Parota’ is a popular Kolkata street food. It is a crispy shallow fried bread stuffed with egg , finely chopped onions, and chopped green chili filling. It is sometimes even stuffed with different vegetables or minced meat. The process is a bit lengthy but it is worth trying.

Ingredients
For the dough :
- All purpose flour / maida – 1 1/2 cups
- Whole Wheat Flour – 1/2 cup
- Salt – ΒΌ tsp
- Oil – 2 tbsp
- Water , to kneed the dough
For the minced meat filling :
- Minced meat – 1 lb
- Onion – 1 medium , cut into slices
- Green chillies – 2-3 chopped
- Ginger-garlic paste – 1 tbsp
- Turmeric powder – 1/4 tsp
- Bengali garam masala – 1/2 tsp
- Red chilli powder – 1/2 tsp
- Oil – 2 tbsp
- Salt and sugar to taste

- Eggs – 4
- Oil for frying the Paratha
Instructions
In a large bowl , mix the all-purpose flour and wheat flour, together with little salt and oil. Now gradually add water to kneed a soft, non-sticky dough. If the dough feels sticky, add a little all-purpose flour and knead again. Cover the dough with a damp towel and keep aside.


Heat one tablespoon oil in a pan and fry the onion slices first and fry for 2-3 minutes or till they turn brown in color.
Add the ginger garlic paste and the green chillies and keep frying it on medium-high heat for another minute.

To this add the keema / ground meet and mix well. Add salt, red chili powder, turmeric powder , garam masala powder and mix thoroughly. Close the lid and let the keema cook for about 4-5 minutes or until fully cooked.
Now beat the eggs with salt and keep aside.
Knead the prepared dough lightly for another couple of minutes and divide it into 6 equal size balls.
Now take one ball and roll out as thin as possible , but not paper thin as it will not able to hold the stuffing well.
Place 1/6 portion of the keema mix and 3-4 tbsp of the beaten egg in the middle of the rolled dough and spread it a little bit.
Now first fold the top and bottom part toward the center to cover the filling , then fold the left and right part to form a square.

Now add the paratha to medium hot oil and shallow fry both the sides (2-3 minutes each side ) until crispy and golden brown.

Serve the Mughlai paratha hot with Spicy potato curry or ketchup.
