What is Hing er Kochuri/Sattu Kachori?
Hing er Kochuri is a deep-fried puffed bread , stuffed with a pungent & spicy filling made of Asafoetida/Hing and roasted gram/chickpea flour. It is a very famous and delicious breakfast in West Bengal , usually served with a side of Cholar Dal or Alur Dom.

Ingredients
For the Dough
- Maida / all purpose Flour – 1 cups
- Whole Wheat Flour – 1/2 cup
- Ghee or white oil – 2 tablespoons
- Salt – a pinch
- Water : for kneading
For the Stuffing or Pur
- Roasted Chickpea Flour / Chatu / Sattu – 1 cup
- Hing ( asafetida ) – 1 tsp
- Bhaja Masala – 2 tablespoon ( Recipe here )
- Salt – to taste
- Sugar – 1/2 tsp
- Water for kneading
Other
- Oil for deep frying
Instructions
In a big bowl, take maida/all purpose flour, salt, sugar and oil and mix well. Now gradually add water and knead it to make a soft pliable dough. Once done, keep it covered with a damp kitchen towel and let it rest for 30 minutes.
Mix all ingredients under stuffing or pur in a bowl except water. Add water little by little until all combined.
Take small balls from the dough and place a portion of the stuffing at the center, cover and roll out lightly using a rolling-pin.
Heat the oil in a kadai and deep fry kachoris on medium heat till golden brown.
Serve hot with your favorite curry ( aloo r dom/cholar dal ) or chutney.
