Easy Dum Aloo Without Onion-Garlic / Potato in Spicy Tomato Gravy

What is Dum Aloo ?
Dum Aloo is a popular vegetarian recipe cooked throughout India consisting of potatoes usually smaller ones , (sometimes instead of baby potatoes, big potatoes are used , peel and cut into big 2 inch pieces) are first fried , then cooked slowly at low flame in a tomato-based gravy with spices. In Bengal there are different variations of Dum aloo. Like this one , contains no onion and garlic , we called it Niramish Allo r Dum. During festivals in any prasad, this Aloo r Dom is a must with khichdi and chutney or Poori.

Ingredients
  • Potatoes – 3-4 (peel and cut into 2 inch pieces) / Baby Potatoes – 14- 16
  • Oil – 2-3 tbsp
  • Cumin Seeds – 1/2 tsp
  • Ginger, finely chopped – 1 tbsp
  • Tomato – 2 , pureed or chopped
  • Roasted Cumin Powder – 1 tsp (dry roasted and grinded)
  • Turmeric Powder – 1 tsp
  • Red Chilli Powder – 1/2 – 1 tsp (depending on how spicy you want)
  • Garam Masala – 1 tsp
  • Bay Leaf – 1
  • Asafoetida / Hing – a pinch
  • Salt to taste
  • Sugar to taste
Instructions
In a pan, add 2 tbsp of oil , add bay leaf and pinch of asafoetida and cumin seeds.
When they start to sizzle, carefully add in the ginger, fry for 30 second , then add tomatoes.
Add turmeric powder, red chili powder and salt. Fry for 3-4 minutes till the tomato is soft and pulpy.
Add potatoes , fry for another 3-4 minutes.
Add some salt and sugar. Mix well. Adjust the seasoning as per your taste.
Add one cup of water and cover it. Let it cook at low-medium flame until potatoes are soft , about 10 -12 minutes. Before turning off the heat, add the garam masala.
Serve hot with Kachori / Poori / Paratha.
