Ingredients
For Praline :
- Brown Sugar – 1/3 cup
- Unsalted Butter – 2 tbsp
- Chopped Nuts (Pecan , Almond , Cashew) – 1/3 cup
- Salt a pinch
For Butterscotch Ice-Cream :
- Chilled Sweetened Condensed Milk – 10-12 oz (depending on how much sweetness you want)
- Heavy Whipping Cream – 2 cups
- Vanilla or Butterscotch essence – 1 tsp (optional)
- Yellow Food Color – 1/2 drop (optional)
Instructions
Add sugar in a pan on medium heat. Stir at intervals. Chop pecans and keep them ready.
When the sugar begins to melt and start to caramelize , add butter and salt. mix well.
Turn off the heat. Immediately add the crushed nuts. Mix quickly.
Spread the mixture on a greased surface or on a parchment paper. Let it cool down.
Break the praline in small pieces and crush to a coarse powder form in a mortar pestle or transfer it to a food processor and pulse till you get a coarse powder.
Now in a large mixing bowl , with an electric mixer , beat heavy cream and vanilla until stiff peaks form.
With a rubber spatula, fold in half of the sweetened condensed milk until combined. Then fold in the other half.
Also add the crushed praline , vanilla or butterscotch essence, and the food color (if you’re using). Fold in till thoroughly mixed.
Pour the cream mixture evenly into a freezer-safe bowl.
Cover and freeze for at least 8 hours.
Scoop out the ice-cream and enjoy.
