Christmas Fruit Cake : Part 2 : Baking The Cake

Fruitcake is a flavorful, rich, and dense yet moist cake packed with different kinds of candied or dried fruits, nuts, and spices, and optionally soaked in alcohol. This easy fruitcake is our family’s favorite, and perfect for the holidays.

1 Loaf ( 9*5 )

1 hour 30 minutes – 1 hour 35 minutes

Ingredients
  • All-purpose flour – 1 1/2 cups + 1/4 cup ( for tossing the fruits )
  • Baking powder – 2 tsp
  • Ground cinnamon – 1/2 tsp
  • Ground nutmeg – 1/4 tsp
  • Salt – 1/4 tsp
  • Unsalted butter, room temperature – 1 cup / 2 sticks
  • Brown sugar – 1 1/2 cups
  • Large eggs , room temperature – 3
  • Vanilla extract – 1 tsp
  • Milk, room temperature – 1/4 cup
  • Plain yogurt, room temperature – 1/2 cup
Instructions
Preheat oven to 325°F. Butter and flour a 9-inch loaf pan.
Strain soaked fruit into a separate bowl. Reserve the liquid. Toss soaked fruit with 1/4 cup of flour. Set aside. Check This Out : Christmas Fruit Cake : Part 1 : Soak Your Fruit
Combine baking powder, cinnamon, nutmeg, salt and 1 1/2 cups of flour in a medium bowl and keep aside.
Combine milk and yogurt in separate bowl. Set aside.
Beat together the butter and sugar until fluffy. 
Add in the eggs one at a time, scraping the bowl after each addition.

Add about 1/3 of the flour mixture into the butter mixture followed by about 1/3 of the milk mixture. Continue the process of alternating between the flour & milk and beat on low speed until just incorporated. Do not over mix ( you can just use a spatula at this point to avoid over-mixing ).
Gently fold in the floured fruits and nuts until evenly distributed.
Spoon the batter into the prepared 9×5 inch loaf pan. Bake at 325°F for approximately 55 minutes and then reduce temperature to 300°F and bake for another 35 to 40 minutes until fruitcake is golden brown and toothpick inserted in center comes out clean.
Remove the cake from the oven and place it on a wire rack to cool completely. Then, with a skewer, poke holes in the top surface of the cake and liberally brush with alcohol or orange juice, or simple syrup (optional). This will make the fruitcake more moist.
Wrap tightly with plastic wrap and then in aluminum foil to store or serve immediately. ENJOY !!
