Macher Jhal is a staple Bengali fish curry. It is prepared by cooking fish in a spicy gravy , flavored with nigella seeds , green chili, mustard paste and cooked in mustard oil. Pabda is a very delicate fish with extremely flavourful flesh. Hence Pabda Macher Jhal is cooked light with minimal usage of spices.

Kachori (or Kochuri) , is an essential part of Bengali cuisine. It is mostly eaten as a tea time snack in the morning or evening , often accompanied with tasty potato-peas curry and Bengali sweets. There are different variations of Kochuris available , like Koraishutir Kochuri (Peas stuffed) , Hing er Kochuri (Sattu stuffed) , Radhaballavi (lentil stuffed) and many more.
Fish Kachori is one of them and prepared by deep-frying, soft and flaky pooris stuffed with spicy, crumbled fish filling. I’m sharing my version here, the way I make it at home.

Here the recipe I’m sharing is Calcutta or Kolkata style biryani , evolved from the Lucknow style , also known as Awadhi Biryani. The speciality of Calcutta biryani is use of potatoes. Kolkata Style Biryani is prepared by adding the meat and rice in alternate layers and the whole pot is then covered , its lid secured with dough (dum) , and then cooked over a low flame. This combination of spices gives it a distinct flavor compared to other styles of biryani. The rice is flavored with rose water along with saffron to give it flavor and a light yellowish color.
Egg Rolls are one of the most popular street foods in Kolkata. It is prepared with delicious flaky flat-bread, a layer of egg on one side and filled with thinly sliced onion , cucumber with some hint of green chili , a little sprinkle of chaat masala , Indian black salt , a tiny amount of ketchup and then rolled like Wrap or Frankie.
