What Is Bengali Egg Roll ?
Egg Rolls are one of the most popular street foods in Kolkata. It is prepared with delicious flaky flat-bread, a layer of egg on one side and filled with thinly sliced onion , cucumber with some hint of green chili , a little sprinkle of chaat masala , Indian black salt , a tiny amount of ketchup and then rolled like Wrap or Frankie. Today Roll comes in a large number of varieties , like ‘Egg-Chicken roll’ , ‘Mutton roll’ , ‘Egg-mutton roll’ , ‘Paneer roll’ and many more.

Ingredients
For the Roti/Wrap
- All Purpose Flour – 1/2 cup
- Wheat Flour – 1/2 cup
- Oil – 1 1/2 tsp
- Salt a pinch
- Water
For the Stuffing
- Egg – 4
- Cucumber – 1 cup , thinly sliced
- Onion – 1 , thinly sliced
- Green chili – 4 , chopped
- Salt to taste
- Black Pepper Powder
- Tomato Ketchup
- Chili Sauce
- Lemon Juice
- Oil to fry
Instructions
In a mixing bowl combine all purpose flour , wheat flour , salt and oil.
Now add the warm water and knead the dough until it is soft and smooth. Cover the bowl, and allow it to rest for 15-20 minutes.
Now divide the dough into 4 equal parts and roll the dough into 6 inch circles/disc. Cook roti on a heated tawa/pan for 1 min each side, remove from tawa/pan. Keep aside.
In a bowl take one egg , 1 chopped green chili and sprinkle little salt and beat well.
Add oil in a frying pan pour the egg mix in and swirl it around to make the size of the roti/wrap.
Now place the roti over the semi-cooked egg and press down gently. Turn over to fry the other side.
Remove from the frying pan and place on a plate, egg side up.
Now place 1/4 of the sliced cucumber and onion horizontally at the centre of the roti/wrap.
Add tomato sauce , green chili sauce , salt and pepper powder over the cucumber-onion mixture. Squeeze some lemon juice over it.
Wrap up the roll into a Parchment paper or Paper towel or Aluminum foil. Repeat step 4-10 for the rest of the rotis/wraps.
Serve Hot.
