Banana Bread

What is Banana Bread ?
Banana bread is a moist, sweet, cake-like quick bread , made from mashed bananas.

Ingredients
  • All-purpose flour – 1 3/4 cup
  • Unsalted butter, softened at room temperature – 1/2 cup
  • Eggs , at room temperature – 2 large
  • Ripe bananas, mashed – 1 cup ( 2-3 bananas )
  • Sugar – 3/4 cup
  • Baking powder – 1 tsp
  • Baking soda – 1 tsp
  • Salt – 1/2 tsp
  • Milk – 2 tbsp
  • Vanilla extract – 1 tsp
Instructions
Preheat the oven to 350°F. Butter or spray and line one 9×5 inch metal loaf pan. Set aside.
In a large bowl, combine flour, baking soda , baking powder and salt. Set aside.
In another bowl , using a handheld or stand mixer on medium speed , cream the sugar and butter until light and fluffy.
Now add the eggs one at a time, beating well after each addition. 
Add bananas , milk and vanilla , mix well. It will look a little curdled at this point , but that’s okay , it will go away after adding the flour.
Add the flour mixture ( add half first , mix , and then add the rest ) and beat on low speed until just incorporated. Do not over mix ( you can just use a spatula at this point to avoid over-mixing ).
Pour batter into prepared pan , smooth the top.
Bake in preheated oven for 40-45 minutes, until a toothpick inserted into center of the loaf comes out clean.
Remove from the oven and allow the bread to cool completely before slicing.

How to Store Banana Bread :

  • If you’re storing it on your counter at room temperature , cool the bread completely and put it in a air-tight container. The bread will stay soft and moist for about 4 Days.

  • If you’re storing it in the fridge , cool the bread completely , then wrap it tightly in plastic wrap to keep the moisture of the bread inside the loaf. The bread will last over a Week.

  • If you’re storing it in the freezer , cool the bread completely before wrapping it with a plastic wrap. Then put the wrapped banana bread in a freezer bag. The bread will last about 3 Months. Do not forget to write the date on the bag. To defrost the loaf unwrap it , and thaw it in the fridge overnight or to speed up the process , microwave them on high power for 15 to 25 seconds.
