What is Aloo Posto ?
ALOO POSTO is a traditional Bengali recipe of potatoes , made with nutty flavored poppy seeds paste , with a hint of heat from green chili. This delicious recipe is best served with steamed rice and biuli r dal (Urad Dal/Lentil).
Ingredients
- Potato – 2-3 medium
- Green Chilies – 2-3
- Poppy Seed – 5-6 tbsp
- Red Chili Power – 1/2 tsp
- Turmeric powder – 1/2 tsp
- Salt , to taste
- Sugar , a pinch
- Mustard oil – 3 tbsp
Instructions
Soak the posto/poppy-seed in warm water for at-least 30 minutes.
Grind to fine paste with 2 green chilies and very little water.
Next rinse, peel and chop 2 large potatoes.
Heat 2 tablespoons mustard oil in a pan or kadai and let it smoke , then turn it to medium-low flame.
Temper the oil with dried red chillies and kaalo jeere.
Add the potatoes. Fry for about 5 minutes. The potatoes should not brown, so keep stirring them regularly.
Now sprinkle some turmeric powder.
Add the poppy-seed paste, along with salt and sugar.
Now add water. The amount of water required depends on the consistency you want.
Now cook on low heat until the raw smell of poppy paste goes away. This should take about 5 minutes.
Add 1 tbsp mustard oil on top , mix well.
Serve hot with steamed rice.
